Thanks Dewey and Richard for your input. This batch is mainly there so I get an idea of what is going on so I have a better chance when I pick grapes in July. I may even start another batch to try to get the understanding down. I know that Welches sound a little cheating but it is to just do some run throughs before the bigger try down the road. M5, I would dump the rest of the yeast in. Take out some of the must and put into a clean, glass jar (mason jar, etc) with a lid, or use a plasic baggy and a rubber band. Add some water and some sugar (about 2T of sugar and 1/2 C water). Now add the rest of your yeast to this and watch it grow. When it is ‘foaming’ like a sponge on top, add it to the rest of your must. Not long ago, there was a discussion about how much yeast to use. Buy all the yeasts you will need in the winter-time as wine yeasts are not shipped via refridgerated truck to your local winemaking shop in the summertime. What you wind up with, if you but in the summertime, are a lot of yeast packettes that have been exposed to heat and are thus, mostly dead. Not good for your wallet. Don’t be afraid to experiment with different yeasts. You’d be surprised at the difference. Try another ‘welches’ batch with a different yeast and compare the two after you bottle. Have fun. I will admit it has been around 28 years since I made my last bit of wine, but if you made a starter batch first as I recall is usually called for, it doesn’t matter. The yeast multiplies prodigiously. If it is out gassing now, it is doing its job fine. Just watch the air lock and temp.. If it gets too cold that will slow the yeasts procreation, and slow their work.

I did exactly that for many years. Divided up the yeast into 5 small packs am extravagant, I use a whole package for 1-5 gallons.) Also after 6 days it was sending bubbles through the airlock about every 6 seconds. Yea I sat there a while and stared. Now, about 16 days later, it bubbles about every 6.5 minutes. Tough to answer. What type of yeast? If it is Montrachet, no it wouldn’t be normal. If it is Cote de Blancs it can be. Did you use yeast food? Welches grape concentrate. yuck…… 9 days is a tad long to keep that in the primary (probably), but it is not extreme. A weekish is typical. Dewey
