well, seeing as i have no experience in the brand of juice you speak of in this thread – is it possible to use any juice in a concentrated form ? or even a pasturised sweetened ( watered down ) juice off the shelf ? or is it a no-no ? – Chris.

Chris, Welch’s is an American brand, but any brand that does not contain preservatives will do.  If the list of ingredients says the concentrate contains sorbate, sorbic acid, or preservatives, it will not easily support fermentation. I started a must from frozen fruit concentrate last night and the fermentation took right off.  I made a starter of sweetened water with a pinch of yeast nutrients in it.  The yeast activated within 20 minutes and I let to go for an hour.  Then I added 1/4 cup of the reconstituted and balanced juice (sugar, acid, tannin, and yeast nutrients had been added) to the starter and waited 30 minutes.  I added another 1/4 cup every half hour until my must was 1/2 cup of sweet water and 1 cup of juice.  I added this to the must in my primary without stirring and within a half hour the surface was covered with a head of foam.  This morning I stirred it and recovered the primary with a cloth.  When the initial, vigorous fermentation subsides in 5 to 8 days, I will transfer it to a secondary and attach an airlock.  I will not rack it until the specific gravity is at 1.000 or lower. I’ve done this with grape, white grape and white grape rasberry. I followed the receipe on Jack’s site and they turned out great. I think the white grape rasberry came out the best. I made all in 5 gallon batches and when all was done(stabilized and ready to bottle) I added 2 cups of sugar and 2 more cans of concentrates. Let set 10 days and bottled, I quess at this point it is drinkable but I didn’t open my first bottle for 3 months and they were great!! – Hide quoted text — Show quoted text – How does this stuff taste?  Approximately how long should it be left to age?  I’m going to try Welch’s 100% white grape juice concentrate. I have some going right now. I used: 2cans Welches 1 1/4 lbs sugar 2 tsp acid blend 1 tsp pectic enzyme 1tsp yeast nutrient 1 packet Montrochet yeast I just started it last week. The fermentation was VERY strong.        I’ve made a silver medal or two using Welches.  A marvelous rose’ and a _very_ good, Gold medal winning Peach from their juices.      Jim L.
