can't get the bung out (yes, it sounds funny!)

Question:

Pretty new to wine making.  On my first batch.  I bought appropriate sized rubber bungs for 1 gallon and 3 gallon carboys (and jug).  At least according to Presque.  Even trying to remove right away it’s a real pain.  I just chipped the rim of a 1 gallon jug!  Using a metal rod in the hole to pry out.  Wrapping in cellaphane (as recommended by a book I have) the things won’t fit.  If I put in "lightly" air is escaping (I can tell when fermenting). HELP! Also, what # sizes of bungs do you recomend for these standard containers.  Also, I read cork is better (no chance of rubber taste) but I can’t find any.  Yes or no and where to buy (I need to order by mail).
