Has anyone ever tried making wine out of crab-apples? I have a tree in my yard just loaded with the ripest batch of fruit I have ever saw. I think they are fermenting just hanging on the branches! If you have any recipes or ideas I surely would appreciate it.

Here’s one out of a book I have, I’d guess Crab-apple wine would be pretty good, but I’m just a dweeb. There are 2 in the book, the more simple one is as follows. The other involves grape concentrate, which I believe defeats the purpose of making a "fruit" wine, vs. a grape wine. I might be totally ignorant and wrong about this, but I maintain the position until I’m corrected. <G THE FOLLOWING IS FOR ONE GALLON, multiply by 5, all but the yeast. 3.5 lbs crab-apples 1 quart apple juice 6 pts water 1.5 lbs sugar ..5 tsp pectic enzyme 1 tsp yeast nutrient 1 crushed campden tablet 1 package champ. yeast (short for champagne, or however the heck you spell it) recipe sez if you dont have a press, (and few people do) then chop up the crab apples and put them in a nylon straining bag. Avoid chopping the bitter pits if you can. Then crush them, (with your hands or very clean feet) and strain into primary fermenter. The recipe above is by the book, and would probly turn out wonderful, you should follow it. Me personally, I’d probly use more crab apples per gallon, (like at least 4 lbs) and skip the apple juice, and use probly 2 lbs of sugar per gallon, but I wouldnt recommend it, cause it might be bad, and I hope your stuff turns out good. Also, Ive gone to using "wine" yeast for all recipes, no matter what type the recipe calls for, again, this is probly bad, and I dont recommend it.
