We are thinking about putting together a cranberry fuit wine kit — but with fresh cranberries, so probably wouldn’t make it over the pond. -Zachary

Working with a puree, do you simply expect to have a thick layer of lees (read, "dramatic racking losses") and adjust somehow accordingly for the targeted end volume? Shawn

Aha, I see your point. Actually, I don’t worry that much about lees, and in any event I usually 0prepare extra must/juice for topping up with. When I made cherry wine from the dark sweet cherry puree, I pureed a can of pie cherries and added it and two cans of water (sweetened) to the batch in primary. When I went to secondary, I had must left over and poured that in a 1.5-liter wine bottle topped with a #2 bung and airlock. I used this extra to top up with. Mark, Oregon Fruit Products offers several seedless fruit purees in 49-oz cans. Vinters Harvest Fruit Wine Bases are in 96-oz cans and pack 15 different varieties of fruit. I have only used the Oregon Fruit Products Dark Sweet Cherry (a blend of tart and sweet cherries), but I have used six of the Vinters Reserve bases–blackberry, loganberry, elderberry, gooseberry, marionberry, and blueberry–and never made a bad wine with any of them.
Jack, Just looked at their site … they’re only about 50 miles from me. I realize they’ve got a table to adjust the poundage for loss of seeds, etc., but do you use them the same as fresh fruit otherwise? Warm Regards, Shawn
