I would agree…..taste is probably a big factor, personal taste. I have made wine kit merlots….not bad…but then once in a while I drink a blackstone merlot…. and I think…..MAN!!!! I wish my wine would turn out like this!!!! But my wife loves sweet dessert wines….I’m presently making blackberry and blueberry…they will be her favourites, but the Merlots, whether blackstone or vintner’s reserve….forget it! So, to each his own….. I’ll make both. But at least he LOOVVVVEEEESSSS joAnn, and the feeling’s mutual, so glad you guys can be inebriated with each other! Rick

I do check the pH and TA and they are within normal parameters. I actually think it is in his taste ability. He doesn’t like anything "sour", such as lemons while I put lemon juice in almost everything. and you are right about wines in process. They do not taste that good at this point in time. Hi All, My husbands opinion of many of my wines is, sour, tart,bitter and/or tangy. What am I doing wrong to make such wines? And how should I correct them? Most are in the fermentation stage but he thinks they are a dismal failure. Any suggestions? JoAnn Mantych
Does your husban LIKE wine?? My x-wife did not drink wine at all (or any other kind of alcoholic drinks, beer etc). I asked her a few times what she thought about my wines, but all I got was that it stinked alcohole… After a two-three times i stopped asking about her opinion. J
