Delayed Fermentation

Question:

The yeast I used for an all malt brew was evidently bad and I had to leave wort contained but with no fermentation starting for two days before the local beer and wine making shop opened up and I could buy more yeast.  How long can wort be kept before you run the risk of it going bad?  I will find out tonight if fermentation has started up. What is going on?  Even with the new yeast I put in fermentation has barely started.  All my past beermaking has had very strong fermentation within a few hours of adding the yeast.  This is my first time using "Glenbrew Dortmunder Lager" malt extract.  Is this normal?  Do I need to be concerned? There is a slight kreusen (sp?) formed but no where near what I am used to. Plus the "floating" style fermentation lock has not risen yet.  I’m afraid this batch will be ruined but I will wait to find out. Ted Sabat

TSfew hours of adding the yeast.  This is my first time using   "Glenbrew Dortmunder Lager" malt extract.  Is this normal?  Do I Ted, I used to use this extract before I went to all-grain. It was one of the best extracts I ever used, but what was especially good was the yeast. According to the yeast FAQ that was recently published, it has very high attenuation and low flocculation, which had been my experience.   The cans came packed with a large 500g packet with a gold and scarlet label saying, "GlenBrew Secret Brewing Yeast." However, the last can I bought, about a year ago, didn’t have this packet, it had been replaced with an innocuous smaller white packed stamped "brewers yeast". I haven’t used this new packet, but I just made a cherry Imperial Stout using an old packet that I had kept around. After a month at 68 deg. F, it’s still working. I also recently wrote to Glenbrew asking if I could buy some of the "Secret…", haven’t heard back yet. My question, which packet did you get with the malt syrup, the "secret…" or the innocuous? Thanks,  * RM 1.2 00946 * Ever notice that hare puns tend to breed like rabbits?
