Hi Maurice, My opinion is that as long as the rhubarb tastes good, it is fine. Some people say that only the spring rhubarb should be used. I harvested rhubarb about 3 weeks ago and put it in the freezer. The plants have regrown and I will harvest some more today or tomorrow. I may take a third harvest as well depending on how it tastes. I think the taste does decline if it gets too hot. This year has been really good for tasty rhubarb. When I make my wine, I mix all the rhubarb together to blend it. Also, don’t let your rhubarb flower. If it throws up flower stalks, cut them off. It will also affect the flavor. By the way, when are you coming up to Fargo?
